Think rich, fruity notes with a hint of peppery finish — the ultimate sweet-meets-savory moment.

Get the full recipe below:

Ingredients:
Salmon fillets
1 bunch of asparagus
1 lemon, sliced
5-6 tablespoons Carapelli Organic EVOO
1 clove garlic, grated
Fresh dill, chopped
Ground black pepper and salt, to taste

Instructions:

Preheat your oven to 190°C.
Season the salmon fillets with salt and pepper. In a separate bowl, toss the asparagus with 2-3 tablespoons of extra virgin olive oil and a pinch of salt.
Arrange the asparagus and salmon in a large baking dish, and top the salmon with lemon slices. Bake for about 22 minutes, or until the fish and asparagus are cooked through.
While the salmon is baking, combine grated garlic and chopped dill. Heat 3-4 tablespoons of extra virgin olive oil, then pour over the garlic and dill mixture to gently warm it.
Serve the baked salmon and asparagus hot, drizzled with the aromatic garlic-dill dressing.

Enhance your weekend brunch with our Spinach Crepe Enhance your weekend brunch with our Spinach Crepes, crafted with the rich flavors of Carapelli.🌿(Recipe below) Top them with your favorites - we recommend a fried egg, fresh tomatoes, and mozzarella. 🤌 Simply delicious! 

Spinach Crepes:

3 cups Spinach, 2 Eggs, Carapelli Extra Virgin Olive Oil, Salt, 125g Flour, 180g Milk, Cherry Tomatoes

In a blender, mix all the ingredients until you have a smooth and homogeneous mixture. Pour 1 tablespoon of EVOO into the pan and pour some of the crepe batter, moving the pan slightly to spread the batter. Carefully flip it when the crepe easily detaches from the sides of the pan and cook for 1-2 more minutes. Place the crepes on a baking sheet and fold the ends towards the center, leaving space to place the egg. Bake at 190ºC until the egg is cooked. Serve with cherry tomatoes and dress with salt and more EVOO.

Our extra virgin olive oils are the perfect blend Our extra virgin olive oils are the perfect blend of quality and craftsmanship - so are your recipes prepared with them.✨ @preethi.venkatram prepared these Crispy Smashed Potatoes with Chimichurri Sauce by combining our 100% Italian oil with our baking star, Unfiltered oil. Get the full recipe below:

Crispy Smashed Potatoes:
- Boil the potatoes until tender.
- Place them one a baking sheet lined with parchment paper and smash the boiled potatoes using the bottom of a cup - the thinner the potatoes, the crispier they get!
- Season the potatoes with salt and pepper, add a generous drizzle of Carapelli Unfiltered Extra Virgin Olive Oil and bake until crispy for about 35 to 40 minutes. This oil is just perfect for achieving a perfect crisp!

Chimichurri Sauce:
- Add some parsley, cilanto, garlic cloves, red pepper flakes, red wine vinegar, chopped shalots or red onions, dried oregano, Carapelli 100% Italian Extra Virgin Olive Oil and process until finely minced.
- Serve with potatoes.
